Pork loin chops with sweet potatoes, Craisins, onions, and chopped pecans made in the Crock-Pot with some chicken broth and thyme. Really tender and flavorful. We made enough for leftovers for the rest of the week! Mmm.

Pumpkin turkey chili with kidney beans, carrots, and fat free sour cream (recipe that inspired it). Ooh, and pumpkin beer, mmm. Perfect for a snowy day like today.
Lunch. January 21, 2014.
Lunch today was repurposed leftovers from last night's dinner (see post here: January 20th dinner) - turkey kofta and Middle Eastern rice in a whole wheat wrap with a little extra lemon juice (and hubby added spring mix lettuce).

Ground turkey kofta patty (adapted from this lamb kebab recipe: http://allrecipes.com/recipe/kofta-kebabs) and rice with carrots, golden raisins, toasted pine nuts, lemon, and ground cloves. Super tasty and the picture doesn't do the kofta justice because it is PACKED with flavor.

Oops! We were a little starving and forgot a picture before it was all gone. Tonight's dinner was Casual Gourmet Roasted Red Pepper and Spinach Chicken Sausage, baked sweet potato, and baked butternut squash with thyme and nutmeg. Mmm.
Lunch. January 19, 2014.
Spring mix lettuce with corn, cooked red and yellow bell pepper, cooked onion, crumbled Morningstar Farms chipotle black bean burgers, and red pepper Italian vinaigrette. The burger is a game changer! And a banana smoothie made with vanilla Shakeology, banana, vanilla extract, honey, milk, and water. 😍
Breakfast. January 19, 2014.
Whole wheat burrito with turkey sausage, peppers, onions, avocado, scrambled eggs, and hot sauce. Yum!
