Stuffed red bell peppers filled with ground turkey and rice and topped with sauteed grape tomatoes and crumbled feta cheese. Delicious!

Shredded pork loin chop, corn, tomato, orange bell pepper, avocado, salsa verde, and hot sauce on a whole wheat wrap...leftovers from Saturday night. Yummy, yummy.

Slow cooker pulled pork loin barbacoa style with rice, corn, tomatoes, bell peppers, hot red salsa, fresh avocado, and hot sauce served like a burrito bowl. We'll definitely have this one again and again. Mmmm.

Morningstar Chipotle Black Bean burgers with Archer Farms salsa verde, fresh avocado slides, crumbled feta cheese, and cilantro on a potato roll. I would probably eat this every day. Om nom nom.

Baked Asian marinated chicken breast (recipe here - except I baked them for about 30 minutes at 350F) with roasted baby red potatoes and edamame. Nice change of flavors.

Dinner. January 25, 2014.
Sabatino's (insanely flavorful) Roasted Garlic and Basil Chicken Meatballs, Frankly Fresh Zucchini Cakes with crumbled feta cheese and fresh tomatoes, baby red potatoes, and green beans with garlic. We've been eating leftovers the last few days (which were really delicious, of course), and this dinner was an incredible change of flavors. My hubby bought the meatballs and zucchini cakes at Costco, and admittedly, I was skeptical, but oh man, were they good!
